Baked Mahi-Mahi with Cilantro-Lime Marinade and Spaghetti Squash


1-2 lbs. Mahi-mahi filet 
2-3 limes 
Cilantro leaves, chopped 
1 Spaghetti squash, halved and scooped of seeds
Butter or olive oil 
Salt 

Preheat oven to 375 F.
Prep mahi-mahi filets into portions.
Juice limes and add cilantro and salt and mix.
Pour over fish and let marinate for at least 1 hour prior to cooking.
To prep squash, halve lengthwise and scoop out seeds.
Place in baking dish with enough water to cover the bottom.
Place 1 T of butter or oil into each half, and bake for about 50 minutes or until it can be pierced with a fork. Once cooked, remove from baking dish and scoop "spaghetti" out with a fork into a serving bowl. Fluff with two forks in order to get the butter or olive oil mixed in. For the fish, either grease or place tin foil on a baking sheet.
Once fish is marinated, place on baking sheet and cook for about 15 minutes, or until white and firm.
Mahi-mahi is a firm fish, so this is not a sign of overcooking.
Once ready, serve with squash and a side salad if desired.
